Roasted Garlic Dip

So I have a slight obsession with garlic! I like it enough that if I feel like a cold is coming on, I will take a clove of garlic and eat it raw. I've yet to get a full blown cold in years! Yeah I know, now none of you are going to want to even get close to me for fear of smelling my garlicky breath. I chew mint gum. It helps cover it up! ;)

But I urge you to try this recipe! I got it from a friend from my church. It really doesn't have an over-powering garlic taste and it is so good with some crackers or bread! So here goes:

Ingredients
2 large garlic bulbs
2-3 Roma Tomatoes Quartered
Drizzle of Olive Oil
1 8 oz. Chive & Onion Cream Cheese
1 8 oz. Plain Cream Creese
Basil to taste

Directions



Cut heads off garlic

Quarter Roma tomatoes



Place garlic in stoneware dish with quartered tomatoes



Drizzle with olive oil

Roast covered for 45 minutes at 425 degrees



Squeeze out garlic and skin tomatoes once it cools



Mash in bowl



Add cream cheese & basil (I completely forgot my basil in this batch!)


Chill


Enjoy!





Now I'm officially wanting to make another batch of this up along with some Beer Bread (my favorite with this) and eat it. Yum!
